Quick Chicken Veggie Mash Recipe
Ingredients:
1 pre-cooked rotisserie chicken (use the two breasts, chopped)
Table spoon office flour
One onion
Mini carrots (handful)
Turnip (small pieces)
Any frozen veggies you like (e.g., peas, corn, green beans)
1.5 - w leters of water
1 packet of soup mix (like split peas etc from Dominion, Blue brand)
2 vegetable bouillon cubes (from Bulk Barn)
1/2 cup pasta sauce
A pinch of rosemary
Salt and pepper to taste
Optional: Shredded cheese and ranch dressing for topping
Instructions:
In a large pot, fry onions in butter and add flour to make a roux. Add water. Combine carrots, turnip, frozen veggies, soup mix, bouillon cubes, pasta sauce, and rosemary. Salt and pepper to taste. Add enough water to cover everything.
Bring to a boil and let it simmer for about 1 hour.
Add the chopped chicken (less time if it’s fresh; a bit longer if it’s been refrigerated).
Mash everything together to desired consistency.
Let it cook for another 30 minutes on low heat.
Serve with cheese and a drizzle of ranch dressing on top.
