Quick Chicken Veggie Mash Recipe

Ingredients:

  • 1 pre-cooked rotisserie chicken (use the two breasts, chopped)

  • Table spoon office flour

  • One onion

  • Mini carrots (handful)

  • Turnip (small pieces)

  • Any frozen veggies you like (e.g., peas, corn, green beans)

  • 1.5 - w leters of water

  • 1 packet of soup mix (like split peas etc from Dominion, Blue brand)

  • 2 vegetable bouillon cubes (from Bulk Barn)

  • 1/2 cup pasta sauce

  • A pinch of rosemary

  • Salt and pepper to taste

  • Optional: Shredded cheese and ranch dressing for topping

Instructions:

  1. In a large pot, fry onions in butter and add flour to make a roux. Add water. Combine carrots, turnip, frozen veggies, soup mix, bouillon cubes, pasta sauce, and rosemary. Salt and pepper to taste. Add enough water to cover everything.

  2. Bring to a boil and let it simmer for about 1 hour.

  3. Add the chopped chicken (less time if it’s fresh; a bit longer if it’s been refrigerated).

  4. Mash everything together to desired consistency.

  5. Let it cook for another 30 minutes on low heat.

  6. Serve with cheese and a drizzle of ranch dressing on top.
